How to Make AIP Fruit Cobbler

Serves: 4 servings
  • 4 cups fruit, frozen (suggestions include peaches, blueberries, marionberries and even a mix)
  • ¼ cup Tigernut flour
  • ¼ cup arrowroot starch
  • 1 tablespoon cinnamon
  • ¼ teaspoon baking soda
  • ⅛ teaspoon sea salt
  • ¼ cup coconut oil
  • ¼ cup honey
  1. Preheat the oven to 400 degrees F.
  2. Add the frozen fruit to a medium size baking dish. (I use a Pampered Chef round covered baker.)
  3. Combine the dry ingredients in a mixing bowl.
  4. Then, add the honey and coconut oil to the mixing bowl.
  5. Mix the ingredients together using the back of a fork to combine.
  6. Pour the mixture over the frozen fruit.
  7. Place in the oven with the lid on for 30 minutes.
  8. After 30 minutes, remove the lid and bake for another 15 minutes.
  9. Tip: For smaller fruit like blueberries, cooking time may be a few minutes less.
